Bristol rides her bike!

Let me just warn you now, we were impressed by this little girl.  So impressed, we acted like she was the first kid to ever ride a bike.   Bristol has been sitting on her bike and having us push her around since she got it for her birthday at the beginning of the month.  She can pedal on her tricycle really well so we weren't quite sure why it wasn't happening on her bicycle.  She kept saying I can't but we kept encouraging her to try.  The other night she asked daddy to push her on her bike again.  Which is why she doesn't have a helmet on in most of theses pictures.   Jeremy encouraged her to just try and  pedal and completely by accident she managed to do it for a few seconds.   We cheered, clapped, and told her awesome she is.    And just like that she took off.   In a on a matter of minutes she had this whole bike ridding thing down with turns!   After about an hour of practicing in the back yard we unleashed her on the street.   The only reason she is ridding on the streets is because our sidewalks are not very easy to ride on or push a jogging stroller on for that matter.   

Its still hard to believe she is 3.  And riding a bike.

I am not very adventurous when it comes to food.  But I am a lot better than I was 7 years ago.   My main problem is smell.  If something smells weird to me I can't eat it.   I try.  But then my nose gets a whiff of it and its all over.   Poor Jeremy never gets anything with pumpkin in it at our house.  I CAN NOT STAND THE SMELL OF COOKING PUMPKIN.  I know I am in the minority and everyone loves pumpkin but not this girl.   Normally if I don't want something I will still make it for him but pumpkin is one thing I can not make.  It ruins my appetite for the whole day. Put like the good wife I am, I buy him a Costco pumpkin pie once a year. This whole clean eating thing has forced me out of my comfort zone.   It has me trying recipes with ingredient that sound horrible together but are surprisingly amazing.  I have also found that I do not like the smell of nutritional yeast but since most recipes calls for so little of it I can get over it because I can't smell it once I mix it in.   Which is a good thing because I have searched high and lo for this stuff.

Tonight I decided to try Vegan Enchiladas with Cilantro .   I don't eat cilantro.  It is disgusting and once again  completely ruins my appetite.   POOR Jeremy.  This is another favorite thing of his.   When I was putting the dish together both Jeremy and I were turning our noses up at it.   It looked good but all of the different things in it really didn't sound good together like yams and chopped spinach.  Who puts those together? Then lets throw in black beans, onions, green peppers, and whole bunch of spices.  Lets just say our backup plan was the local Mexican restaurant and I already had my meal picked out.  Then it was time to taste them.   First up was Jeremy.  He is the tester of everything.  Even when we are at other peoples houses I have him taste the food before I will taste it because I look really weird when I start smelling everything.    He was like "Its definitely not a real enchilada" .   Well DUH it has yams in it.   But what does that really mean, is it disgusting?   Should I go put on real pants because my marine corps sweats are not appropriate going out to dinner attire. He then told me I needed to try it.  I proceeded to eat 4 helpings.  THAT IS A LOT OF FOOD FOR ME.  Even if I really like a meal I will normally only get a little 1/2 serving extra if I am still hungry but I really try to only eat until I am satisfied.  But I could not stop.  They were so stinkin good. Bristol was the only one who didn't eat tonight, well that's a lie she licked all of the avocado cream sauce off the top.

Lets put it this way, if I had more tortillas we would be eating this again for dinner tomorrow, and the next day, and the next day.  It was AMAZING.  I doubt anyone I know would ever be willing to try this recipe but if you are willing to give it a go you will not regret it.

I did a few things different.  I didn't add vegan cheese.  To me that is a weird concept.  Maybe its because I am not a huge cheese fan to start with but I think it completely defeats the purpose of eating healthy to eat a very processed cheese flavor.  Why not just put cheez wiz or Velveeta on top of your food.  Its probably cheaper.  Of course as I already said, I didn't use cilantro.    I added 2 tables spoons plain Chobani Greek yogurt to the cream sauce. And I would use less lime in the sauce the next time, it was a little to much for me.

Oh, you may ask, where is the picture?  Well I was to busy shoveling the enchiladas into my mouth to think about taking a picture.  Maybe next time, because there will definitely be a next time.

Oh and how is clean eating going you may ask.  Well not really because I am sure no one really cares.  But I will tell you anyways.  I am loving it.  When we stick to it that is.  We may have had  a few coffee drinks, snickerdoodles, and MM's.   I feel really good on days we actually stick to it.  We do have our cheat days but I am completely satisfied at the end of the day.

Omelets, Doctors appointment, and general rambling....

* disclaimer--- this post has been written over several days, as my random crazy thoughts happen.  

The Stand may be my favorite song to run to right now..  I listen to it at least 3 times during my run. 
I really didn't feel the need to run today but I did anyways. I am so thankful that I did because it was an amazing run that left my lungs good.

I love omelets. Best meal in the whole world. Don't get me wrong I love a good steak, awesome pasta dish, or good burger but there is nothing quite like an omelet for me. All of that grilled broccoli, peppers, mushrooms, and spinach. Yummy! I think I need one for breakfast again tomorrow!

I am really enjoying Barre 3 workouts. Such small moves that make my body burn. Maybe one day I will get to do a class at a studio not online.

We are cleaning out my office to make it an official bedroom. Right now Eldon's crib is in there but it isn't very honey. I got quite far on it today. The closet is cleaned out and my fabric is of the shelves in storage bins. While I love having my own sewing room I don't use it. With the closest fabric store an 1 1/2 away I have lost my creativity.

I really want to get our family pictures some again but I am having a hard time finding a photographer. I don't mind paying a fair price but I am expecting a lot if you want $200+ for a session. I know, I am super picky.

Today I was planning to run to the commissary up here to do a little grocery shopping but my plans kind of changed.  Eldon woke up barking, raspy, and having a pretty difficult time breathing.  A nebulizer treatment later and he wasn't sounding any better.  Since he was already sick at the beginning of the month and we are not even to winter I decided to call the doctor to get him in today.  Thank goodness I did.  He was diagnosed with asthma.  Or should I say he was finally diagnosed with asthma, its been a long time coming.    He was taken of his daily singular medicine and put on a steroid for his nebulizer.  Hopefully this will get everything under control.

The kids were so well behaved.  I was impressed.  They handled everything beautifully.   I was one proud mommy.

Sea turtles, Nemo, and Dory

I have been waiting post this for a couple days because I was hoping to get a video of Miss Bristol telling everyone about the aquarium but she is not cooperating.  Do 3 year olds ever cooperate?  It was written Monday morning.

This morning it is hard to remember all the fun we has yesterday. The fact that there were zero meltdowns from the kiddos. It's hard to concentrate on the fact that I 100% loved spending time with them yesterday. There was no need to shut the bathroom door just so I could have 5 minutes to myself.  I am thankful that they bottled up all the arguing with each other, meltdowns, lack of sleep attitudes for today. Because yesterday was almost perfect.  

The kiddos are both at an age where they are enjoy going new places. I loved watching the excitement on their faces at seeing all the fishes.  It was worth getting up at 5 am to watch them clap for the sea lions every time they swam by.  It was so cool to see Eldon bravely stick his hand in the touch tanks and to watch Bristol be a lot more cautious.  I loved that Bristol and Eldon loved on there Grandparents equally. Sharing there joy with all of them.  Watching Bristol hang out with Maga and Aunt Tawny while we ate lunch giving me a little one one time with little dude.   I loved hearing Eldon's say " fishy" as he pointed to the tanks. 
So even though today has been a day of break downs, fights over the blocks, who gets what.... It is worth it because yesterday was wonderful.  The 3 hour car ride each way was peaceful with excitement over seeing
nemo and Dory on the way down and the peacefullnrss of baby snores on the way home. 
I can't wait to do it again.

The week according to my phone!

This post is also my random thoughts!  

It was a really fast week it seems like.

I asked Bristol what she wanted to wear today and she said pink dress.   She searched her closet for this thing.  

The funny thing is we were just talking last night about how our girl is going to be a tom boy.  Which I am totally okay with but clearly she has a girly side as well.

I had to get a new phone case.  Eldon and Bristol like to stretch it out and it finally stayed that way.  Thankfully Amazon emailed me a while back with phone cases made specifically for my phone.  So it was easy to pick.   
Its a lot brighter in person.

Jeremy swears I will never loose it again because of how bright it is.  

I may be obsessed with running these days.  I look forward to my run every morning.  Yesterday unfortunately I had to take the day off because my house was a complete disaster so I had it get back under control.  But I was right back at it today.  I have been wanting a heart rate monitor for a couple weeks now. I can across this one that works with the Run Keeper app I have on my phone.... maybe for Christmas.

Am I the only one that thinks this is a ridiculous toy?  But it does keep the kids busy so that is a good thing.

I had to have snickerdoodles last night with a cup of almond milk hot coco. They were super yummy but a little too sweet.

I have a replacement phone coming today.   The hard reset didn't fix it, so they sent me a warranty replacement.  

We went and bought our tickets to the aquarium today.  By buying them on base we saved $5 an adult.  Awesome!

I had plenty of other things that I wanted to write about but now I can't remember what they were.  I am sure as soon as I hit publish it will come to me.
